You will need:
Heaped 1 cup rolled oats, plus 1 tablespoon for sprinkling
2/3 cup apple juice
low-calorie cooking oil spray
3 tablespoons butter, soft
1/4 cup plus 1 1/2 tablespoons sugar
1 teaspoon vanilla extract
1 1/2 cups self-rising flour
1 teaspoon baking powder
1 1/4 cups raspberries
2 ripe pears, peeled, cored and cut into 1/2-inch dice
Put the oats in a large bowl. Bring the apple juice to a boil in a small saucepan, then pour it over the oats and leave them to soak for 15 minutes.
Meanwhile, heat the oven to 350 degrees F. Lightly grease a 9 1/2 x 5 1/2 inch bread pan with low-calorie cooking oil spray.
Beat together the butter, sugar and vanilla extract using an electric mixer, until light and creamy. Beat in the eggs one at a time. Fold in the flour and baking powder, then fold this mixture into the soaked oats. Finally, stir in the raspberries and diced pears.
Spoon the batter into the prepared bread pan and sprinkle with 1 tablespoon oats. Bake 1 hour, or until golden brown and a skewer inserted in the middle comes out clean. Turn out and transfer to a wire rack to cool.
